Chitosan is material from deacetylation of chitin, which from arthropod, coelenterate, annelids , protozoans, part of algae and fungi. It is the only natural basic polysaccharide. Chitosan has many functions, such as excellent flocculation, clarification, purification, deacidification, anti - precipitation, thickening, flavouring, solidification, extraction, and so on. As chitosan is safe, non -toxic, odourless, pollution -free, and biodegradable, it has unique advantage in the food industry.
