摘要
以米渣水解产生的蛋白肽与硫酸锌螯合制备蛋白肽螯合锌,用复合胰蛋白酶进行限制性酶解,对酶解工艺影响因素进行研究,探索出酶法水解米渣的最佳工艺参数。确定最佳螯合工艺条件为蛋白肽与硫酸锌的摩尔比为2∶1,pH5.5,反应温度70℃,反应时间90min。
Optimal conditions for preparating zinc chelator with enzymic hydrolysis peptides from rice protein were investigated by chelating reactions between hydrolytic rice protein and ZnSO4. Hydrolyzing rice protein (the byproduct of syrup) into peptide with protamex, the optimal conditions for chelating zinc with hydrolyzed peptides were showed as following: molar ratio of hydrolysis peptides and ZnSO4 in 2:1, pH at 5.5, chelating temperature at 70 ℃, duration of chelating reaction for 90 min.
