摘要
通过优化设计确定化学法和绿色木霉发酵提取柠檬皮膳食纤维(DF)的最佳工艺条件。结果表明,利用化学法提取水溶性膳食纤维的最佳条件为pH2.0、温度70℃、时间30min、加水量30mL/g,利用绿色木霉发酵提取柠檬皮膳食纤维的最佳工艺条件是发酵温度28℃、发酵时间72h、起始pH6.3。
Extraction dietary fiber from lemon peel by chemical methed and Trichoderma Viride, the optimum conditions were determined by orthogonal design test. The result of orthogonal experiment indicated that the suitable condition for extraction of soluble dietary fiber from lemon peel was pH2.0, temperature 70 ℃, extract dosage 30 mL/g, taking-time 30 min by chemical methed,and that fermentation of Trichoderma Vifide were: fermentation temperature 28 ℃, taking-time 72 h, pH6.3.
