摘要
近年来,蛋白质芯片因其具有平行性、高通量、灵敏度高、样品用量少及检测速度快等优点而引起人们的高度关注。对蛋白质芯片技术及其目前的研究进展进行了简要综述,并在此基础上初步探讨了其在食品安全检测中的应用。
During the past years, as for supplement of gene chips' function, protein chips had rapidly attracted the high attention of researchers for its parallel, high-throughput, sensitive, low-sample and detecting quickly. In this paper, the development of protein chips and its research progress on construction of microarrays at present, including solid phase substrates, capture ligand, linking formation and detecting technology, were reviewed briefly. On the aspects stated previously, the application of protein chips in food safety detection, such as pathogenic microorganism, Mycotoxin, residue of antibiotics and pesticides were further discussed in details. With development of self-assembly technology and antibody phage display, protein chips must be main body of high-throughput in the domain of food safety detection.
