茗荷水溶性多糖体外抗氧化性能的研究 被引量:11

摘要 [目的]为多糖抗氧化作用的进一步研究和利用提供科学依据。[方法]采用热浸提法从茗荷中提取多糖,通过测定茗荷水溶性多糖对有机自由基DPPH的清除活性和在模拟胃液条件下其对NO2-的清除作用以及分析其抗油脂氧化性能来研究茗荷水溶性多糖的体外抗氧化性能。[结果]茗荷多糖对有机自由基DPPH有较明显的清除作用,其清除率随多糖浓度增加而增大。茗荷多糖提取物可以有效地抑制动植物油脂的氧化作用。在模拟胃液的条件下,茗荷多糖对硝酸盐有较明显的清除作用。茗荷多糖对NO2-的清除率随多糖浓度的增加而增加,当多糖浓度达到5mg/ml时,其对NO2-的清除率达72.6%。[结论]茗荷多糖可通过清除NO2-而抑制强致癌物质亚硝酸胺的形成,从而减小患癌症的几率。 [Objective] The aim of the research was to provide scientific basis for further research and utilization of the antioxidation effect of polysaccharide. [Method] Polysaccharide was extracted from Zingiber mioga Rose by the method of heat leaching. Based on determining the scavenging activity of water soluble polysaccharide in Z.mioga on organic free radical DPPH and its scavenging effect on NO2^- under simulated gastric juice conditions, and on analyzing its antioxygenic property on fats and oils, the antioxygenic property in vitro of water soluble polysaccharide in Z.mioga was studied. [Result] Polysaccharide from Z.mioga had more obvious scavenging effects on organic free radical DPPH and its scavenging rate was increased with the increasing of the polysaccharide concentration. The polysaccharide extracts from Z.mioga could inhibit the oxidation effect of animal fat and vegetable oil effectively. Under simulated gastric juice conditions, polysaccharide from Z.mioga had more obvious scavenging effects on nitrate. The scavenging rate of polysaccharide from Z.mioga on NO2^- was increased with the increasing of the polysaccharide concentration and reached 72.6 % at the polysaccharide concentration of 5 mg/ml. [Conclusion] The polysaccharide from Z.mioga could inhibit the formation of strong caneerogenic substance nitrite amine through scavenging NO2^- and reduce the cantered probability.
