以山楂、银耳为原料生产山楂银耳保健饮料,通过对比试验和正交试验确定了最佳工艺参数,山楂添加量0.6%,银耳添加量0.8%,复合稳定剂用量0.57%(琼脂0.09%,耐酸CMC0.15%,果胶0.18%,黄原胶0.15%)。
Hawthorn and tremella fuciformis are as materials to produce compound beverage, the optimum technological parame ters are determined by comparative test and orthogonal test, hawthorn takes the percenage of 0.6%, tremella fuciformis 0.8%, composite stabilizer amount 0.57%, thereinto, agar 0.09%, acid-resistant CMC 0.15%, pectin 0.18%, xanthan gum 0.15%.
