摘要 济南菜又称历下菜,是鲁菜菜系之中最为重要的一支,济南菜以清、鲜、脆、嫩著称,口味多以钱咸葱酱、糖酱、酱焖等味型。济南菜常见的烹调方法有炸、煎、塌、扒、熘、爆、焯、烧等,在甜品制作方面,更以拔丝,蜜汁等手法最为擅长。 Jinan Cuisine, also called Lixia Cuisine, is the most important style of Shandong cuisine. In early years of the 20th century when Jinan was open to the outside world, the city attracted a large number of merchants, which not only prospered the city but also promoted the development of the local catering industry. Among the numerous restaurants,Jufengde, Yanxitang and Huiquanlou were most famous. Nowadays, only a handful of them are still in existence, as most have been merged or have diverted to other businesses.
