摘要
采用蔗糖酶酶解法和脱色脱酸树脂进行了无色脱酸高果糖浓缩苹果汁的生产工艺试验。通过正交试验确定了苹果汁中蔗糖酶酶解条件、脱色条件及脱酸条件。结果表明:苹果汁中蔗糖的较佳酶解条件为:苹果汁浓度为120g/L,酶质量比为7mg/kg,pH值为4.5,温度为55℃;XDA-5脱色树脂的较佳脱色条件为:苹果汁浓度为200g/L、pH值为3.5、温度为50℃、流速为150mL/h;D380树脂在温度25℃、苹果汁浓度300g/L、流速180mL/h时吸附分离果酸效果最佳。
The production technologies of high fructose, colorless, acid free concentrated apple juice were studied to acquire high fructose content apple juice by the experiment of sucrase digestion, resin decolourization and de-acidification. The best conditions of sucrase digestion, decolourization and de-acidification were determined by orthogonal experiment. The results suggested that the optimal condition of sucrase digestion were that pH was 4.5, apple juice concentration was 120 g/L, sucrase concentration was 7 mg/kg and temperature was 55℃ ; Decolourization condition of Tesin XDA - 5 were that pH was 3.5, concentration of apple juice was 200 g/L, temperature was 50℃ and fluid velocity was 150 mL/h; The best absorption condition of fruit acid by resin D380 were that apple juice concentration was 300 g/L, fluid velocity was 180 mL/h and temperature was 25℃.
