西湖产区不同茶树种西湖龙井茶的主要生化成分分析 被引量:16

摘要 研究分析了西湖龙井茶原产地保护区中最主要三个茶树品种即龙井群体种、龙井长叶和龙井43采制的西湖龙井茶主要生化成分。结果表明,龙井43、龙井长叶和龙井群体种西湖龙井茶茶氨酸含量分别为18.10、12.48、17.98mg/g;游离氨基酸含量分别为46.79、45.64、46.00mg/g;咖啡碱含量分别为37.54、37.39、34.65mg/g;没食子酸含量分别为1.79、1.53、1.42mg/g;水溶性糖含量分别为33.31、33.67、36.75mg/g;水溶性蛋白质含量分别为12.42、16.55、36.05mg/g;茶多酚含量分别为314.86、307.18、303.92mg/g,并分析了此三个品种茶的儿茶素单体的组成及其含量。 The main biochemical components in Xihu Longjing tea produced from the species of tea plants was studied. The theanine contents of Longjing 43, Longjing Changye and Longjing Qunti (the same as arranged below) were 18.10,12.48 and 17.98mg/g. The free amino acid contents were 46.79,45.64 and 46.00mg/g. The caffeine contents were 37.54,37.39 and 34.65mg/g. The gallic acid contents were 1.79,1.53 and 1.42mg/g. The water-soluble saccharide contents were 33.31,33.67 and 36.75mg/g. The water-soluble protein contents were 12.42,16.55 and 36.05mg/g. The tea polyphenols contents were 314.86,307.18 and 303.92mg/g, and then the compositions and contents of catechin of them were also determined.
