摘要
目的了解市售食品中重金属的污染情况,为食品安全提供依据。方法从罗湖区超市和市集随机抽取食品样品,采用石墨炉原子吸收光谱法和荧光光谱法检测食品样品中的铅、砷、镉、汞、铜含量。结果共检测1323份市售食品样品,铅、镉、汞、铜和砷超标率分别是3.33%(44/1323)、4.98%(29/582)、1.50%(11/731)、1.64%(10/608)、0.08%(1/1233)。铅、镉、汞、铜和砷超标率最大的样品分别是皮蛋(21.54%)、猪肾(23.33%)、猪肾(6.67%)、猪肾(11.11%)、鱼(0.08%)。结论罗湖区市售食品中重金属污染物以铅、镉和汞为主,重金属超标较严重的食品是猪肾、皮蛋和蔬菜。
Objective To investigate the situation of the food contaminated with heavy metals, and to provide the evidences for food safety. Methods Samples of foodstuff were randomly collected from supermarkets and fairs in Luohu District. Heavy metals such as plumbum, arsenic, cadmium, hydrargyrum and cuprum in the food samples were tested by graphite furnace atomic absorption spectrometry and hydride generation atomic fluorescence spectrometry. Results The exceeded standard rates of plumbum, cadmium, hydrargyrum, cuprum and arsenic in 1,323 tested food samples were 3.33 %, 4.98 %, 1.50 %, 1.64 %, and 0.08 % respectively. Plumbum, cadmium, hydrargyrum, cuprum and arsenic in the tested food samples with the maximum over-limit rate were the preserved eggs (21.54 % ), porcine kidney (23.33 % ), porcine kidney (6.67%), porcine kidney (11.11%) and fish (0.08%) respectively. Conclusions Plumbum, cadmium and hydrargyrum are the predominant heavy metal pollutants in foodstuff in Luohu District, moreover, the heavy metal contents seriously exceed the standard in porcine kidney, vegetable and preserved egg.
