摘要
食品辐射加工技术是利用核辐射的γ射线或高能电子束来杀死食品中的寄生虫和致病菌从而提高食品的卫生品质和延长保藏期。具有穿透力强,灭菌彻底,节省能源,不污染环境,加工简单,又能保持食品的色、香、味、形、卫生等特点。现有41个国家共批准了232种辐射食品标准;27个国家统计每年共有50万t辐照食品在市场销售。本文介绍了国内外发展现状及趋势。
Irradiation processing technology of food, which possesses the features of strong force of penetration, complete sterilizing, energy saving, no pollution to the environment, processing simpleness, and maintaining the color, aroma, taste, appearance and hygiene of food, useing γ-ray radiation or high energy electron beam to kill parasite or causative organism with the purpose of advancing sanitary quality and prolonging the storage period. Nowadays there are 232 criterions of radiation food have been authorized by 41 countries. There are 500,000 tons radiation food sold in market according to the data from 27 countries. This paper introduces the development and tendency of the application of radiation technology in food hygiene.
