摘要
速冻食品在贮藏、运输和销售过程中,由于温度的波动,导致其风味和组织状态都会发生劣变,而稳定剂能够较好的保持速冻食品的风味和组织状态本文简述了速冻食品稳定剂在速冻食品中的应用研究进展。
During the store, distribution and sales of the quick-freezing food, because of the temperature fluctuating resulted in the worse of favor and structure of it. The stabilizers can keep the normal favor and structure of the quick-freezing food. So we reviewed the protecting theory and applicatins of the new stabilizers in the quick-freezing food.
