摘要
针对目前UHT奶常出现的质量问题,着重阐述了原料奶、生产工艺各个环节和关键控制点对UHT奶货架期的影响及相应的预防措施。
Aiming at the common quality problems of UHT milk, the effects of several key factors (including raw milk quality, manufacturing technology and critical control points) on the shelf-life of UHT milk were discussed, and corresponding control measures suggested.
