综述了辣椒碱类物质提取及分析方法的研究现状，概要介绍了辣椒碱的理化性质及应用范围，展望了辣椒碱类物质的应用发展前景。
Capsaicin＇s physical and chemical characteristic and its application are described in brief in the paper. This article introduced the research advances of capsaicin＇s extraction and analysis based on the results both at home and abroad.
