摘要
探讨了用玉米淀粉制备氧化淀粉、淀粉粘合剂的氧化反应历程和氧化剂进攻部位。研究发现两种反应虽然都是在淀粉团粒的凝胶相进行,但其氧化反应历程不同,氧化剂进攻淀粉链中脱水葡萄糖单元的主要部位也不相同,前者为离子型反应,氧化剂主要进攻C-2、C-3位的仲羟基,而后者为游离基反应,主要进攻C-6位的伯羟基。
The oxo reactionary processes are investigated ,in which the oxidation corn starch and adhesive are made of corn starch and reactive positions by oxidant.It is found that two oxo reactionary processes are different and principal reactive positions by oxident at dehydrated glucose unit of the starch chain are very different,although the two reactions are happening in the phase of flocculation of starch.The former is one of ion and the latter is one of free redical.The oxident attacks second hydroxy of C-2 C-3 principally in the first reaction and elder hydroxy of C-6 in the second reaction.
