摘要 研究了离体状态下河鲈(Perca fluviatilis)体内淀粉酶、蛋白酶和脂肪酶在不同温度和pH时的活性变化。结果显示:在河鲈肝胰脏、肠道、胃3部位,淀粉酶的最适温度均为30℃,最适pH值分别为5.0、7.0、8.0;脂肪酶的最适温度均为40℃,最适pH值分别为4.0、3.0、6.0;肝胰脏、肠道蛋白酶的最适温度为50℃,胃蛋白酶的最适温度为40℃。肝胰脏、肠和胃蛋白酶的最适pH值分别6.0、8.0、2.0。在各自最适温度下,肠道中脂肪酶比活力最高,其次是肝胰脏和胃;肝胰脏淀粉酶比活力最高,其次是肠道和胃;肠道中的蛋白酶比活力最高,其次是胃和肝胰脏。 By changing temperature and pH, the amylase, protease and lipase of Perca fluriatilis were studied in vitro. The results shown that the optimum temperature of amylase was 30 ℃ for hepatopanereas, intestine and stomach, and their relevantly optimum pit was 5.0, 7.0 and 8.0, respectively. The optimum temperature of Lipase from three digest organs was all 40 ℃ , and their optimum pH were 4. 0,3.0 and 6. 0, respectively. The optimum temperature of Protease was 50 ℃ from in hepatopancreas and intestine, 40 ℃ in stomach, while their optimum pH was 6. 0, 8.0 and 2. 0, respectively. At each optimum temperature, the order of activity of iipase was intestine, hepatopancreas and stomach. Amylase's activity order was hepatopancreas, intestine and stomach. Protease's was intestine, stomach and hepatopanereas.
