摘要
以变色酸乳饮料为材料,用脱脂乳琼脂平板培养分离出污染细菌。将污染细菌接种到新鲜配制酸乳饮料中,观察变色情况,从而确定变色原因是细菌污染。用细菌通用引物扩增出污染细菌16srRNA序列,测序分析,鉴定污染细菌,初步确定污染原因。
The pollutive bacteria were cultured and separatend with the plate count skim milk agar in the yogurt drink of the color deterioration. The pollutive bacteria respectively inoculates in the newmade yogurt drink, the color deterioration is observed, thus the reason of the color deterioration of the Yogurt drink is the bacterial pollution. The different pollutive bacteria were detected by PCR with the universal primer of the bacterium 16s rRNA. Identify the bacteria use the sequence analysis to confirm the reason of the pollution.
