孝感市食品中食源性致病菌污染状况调查 被引量:14

摘要 目的:了解孝感市食品中单核细胞增生李斯特菌、沙门菌、EHEC O157、空肠弯曲菌、副溶血性弧菌的分布状况,初步确定可能污染上述致病菌的高危食品,为食源性疾病的监测提供科学依据。方法:从市场上随机抽取7类食品(生肉、熟肉、蔬菜、奶等)共计253份。依据全国食源性致病菌检测工作手册及国标方法(GB4789)进行检测。结果:253份食品样品中检出致病菌共48株(18.97%),其中分离单核细胞增生李斯特菌20株(7.91%);沙门菌25株(9.88%);EHEC O157检出2株(0.79%);26份水产品中检出副溶血性弧菌1株;48份生鸡肉样品中未分离出空肠弯曲菌。结论:孝感市居民主要消费食品存在致病菌的污染,其中生肉、水产品及散装速冻食品受污染最为严重,应加强市场卫生的监控力度,建立食源性疾病风险预警评估机制,有效预防食源性疾病的暴发流行。 Objective:To investigate the distributing condition of Listeria monocyaogenes,Salmonella,EHEC O157,Campylobacter jejuni and Vibrio phrahaemolyticus in food of Xaogan City and determine the dangerous food of contamination by these pathogens preliminaryly.To provide scientific basis for supervision of food-born pathogens.Methods:A total of 253 samples of 7 foods(raw,cooked meat,vegetables,milk products etc) were examined from the market random.Pursuant to foodborne pathogen detection manual and methods GB(GB4789) detection.Results:Totally 253 various samples were tested including.Among all samples,48 strains were positive for pathogens,The overall detectable rate is 18.97%,The strains and detectable rates for Salmonella,Listera monocytogenes and EHEC O157 are 20,7.91%;2,0.79% respectively.1 strains were positive for pathogens Vibrio phrahaemolyticus were detected of 28 aquatic product,No Campylobacter jejuni were detected of 48 cookmeats.Conclusion:Food miight be polluted by pathogenic bacteria in Xaogan City.In which,raw meat,seafood and frozen food in bulk receive are the most serious.Sanitary supervision department should strengthen management by upervision in order to prevent the food-borne disease from occurrence.
