摘要 [目的]为魔芋葡甘聚糖(KGM)水溶胶在生产中的应用奠定基础。[方法]以天然高分子KGM为主要原料,采用三偏磷酸三钠(STMP)作为交联剂来制备1种可降解磷酸酯化KGM水凝胶。研究不同浓度的KGM和STMP对该水凝胶平衡溶胀比的影响,并分析该水凝胶的生物降解性。[结果]该凝胶溶胀比在溶胀初期迅速增加,其增幅随溶胀时间的延长而降低,8 h后达到平衡溶胀比。该凝胶平衡溶胀比随KGM用量的增加而增加,而随STMP用量的增加而降低。该凝胶可被含β-葡聚糖苷酶的纤维素酶降解,而不能被不含β-葡聚糖苷酶的胰酶等降解。[结论]KGM的改性产物能被降解KGM自身的酶所降解,说明该水凝胶保持了KGM的生物可降解性。 [Objective] The aim of the research was to lay the foundation for the application of konjac glucomannan (KGM) hydrosol in the production. [Method] With natural polymer KGM as main materials, trisodium trimetaphosphate (STMP) was taken as the crosslinking agent to prepare a kind of biodegradable phosphorylated KGM hydrogel. The effects of different conch, of KGM and STMP on the equilibrium swelling ratio of this hydrogel were studied and the biodegradability of this hydrogel was analyzed. [Result] The swelling ratio was quickly increased in early swelling stage. Its increasing amplitude was decreased with the prolonging of swelling time and the equilibrium swelling ratio reached after 8 h. The equilibrium swelling ratio was increased with the increasing of KGM dosage and decreased with the increasing of STMP dosage. This hydrogel could be degraded by cellulase with β-glucanase, but it couldn't be degraded by some enzymes such as pancreatin without β-glucanase. [Conclusion] The modified products of KGM could be degraded by the enzyme of degrading KGM, which indicated that this hydrogel maintained the biodegradability of KGM.
