摘要
以剑花为主要原料,通过提取配制得到一种营养丰富、有剑花风味的乳饮料,结果表明,剑花乳复合饮料的适宜配方为:剑花1∶10提取液70%,鲜奶30%,白砂糖7%、稳定剂0.2%。饮料呈乳黄色、质地细腻、口味适中,其蛋白质含量为1.02%,总糖含量为8.92%。
A kind of nutritional beverage which has the special flavor is prepared from the flowers of hylocereus undatus and milk. The optimal formulation of the beverage was 70% of the extraction of the flowers with the consistency of 1 : 10, 30% fresh milk, 7% sugar and 0.2% stabilizing agent. The beverage is ivory yellow, homogenous and savory. Its protein content is 1.02% and sugar content is 8.92%.
