摘要
论述了嗜冷菌蛋白酶的耐热机制及其所引起的UHT乳的胶凝性质,提出了控制耐热性蛋白酶活性的措施。
This thesis had been discussed the heat resistance-mechanism of psychrophilic bacteria proteases and gelatin properties in UHT sterilisatio milk, advanced measurements to prevent the activity of heat resistance protease.
