高吸油率玉米多孔淀粉的制备工艺研究 被引量:9

摘要 文章以玉米淀粉为原料,用酶水解法研究高吸油率玉米多孔淀粉的形成,在研究单因素的基础上,优化了制备玉米多孔淀粉的工艺条件。实验结果表明:在α-淀粉酶:糖化酶=1:3,酶用量1.5%,pH5.0,温度55℃,时间18h的条件下,得到了吸油率较高的多孔淀粉。 Porous starch was produced from corn starch,the optimum parameters for complex enzymolysis based on single factor level are as follows:the weight ratio of or-amylase and glucoamy is 1:3,enzyme concentration 1.5%, pH5.0,temperature 55℃,time 18h,the porous starch with better absorbent for oil could be obtained.
