摘要
研究了中性蛋白酶和木瓜蛋白酶对鹅血液的水解作用,并分析了酶用量、温度、时间、pH值等因素对鹅血酶水解的影响。结果表明,双酶水解效果较好,确定了其最适宜的酶解条件:中性蛋白酶,酶底物浓度比(E/5)为4000 U/g,pH值为7.0,温度为55℃,时间为5 h;木瓜蛋白酶,酶底物浓度比(E/S)为6000 U/g,pH值为7.5,温度为50℃,时间为4 h。
The hydrolysis to goose plasma with neutral protease and papain is analyzed, such as the influences of enzyme dose, temperature, time and pH value to the hydrolysis. The results show that the enzymatic pair hydrolysis is better, and the most suitable technical conditions are determined. For neutral protease , the ratio of enzyme to substrate (E/S) is 4 000 U/g; pH value is 7.0; temperature at 55 ℃ and time 5 hours. For papain, E/S is 6 000 U/g, pH value is 7.5 , temperature at 50 ℃ and 4 hours.
