摘要
以圆枣为原料,采用果胶酶进行圆枣汁的澄清试验。结果表明,选取果胶酶RAPIDASE C80 MAX最小剂量为200μL/L,60℃下作用3h,即可将果胶基本除去。圆枣汁的透光率可达96%,出汁率可达72%以上,圆枣汁中果胶含量可降低到0.024%。
The clarification experiment with pectinase to actinidia arguta juice is carried. The results show that the minimum dosage of pectinase RAPIDASE C80 MAX is 200μL/L at 60 ℃ for S h to remove thepectinase. The transparency of the juice treated is over 96%, the drop rate is up to 72% and the content of pectin is down to 0. 024 %.
