摘要
[目的]为柞蚕蛹蛋白的提取及应用奠定基础。[方法]在分离柞蚕蛹蛋白的基础上,通过均匀设计法研究在不同pH值下不同浓度阳离子(Na+、Mg2+、Ca2+和Zn2+等)对柞蚕蛹蛋白溶解性的影响,并拟合出柞蚕蛹蛋白溶解性与阳离子的回归方程。[结果]阳离子Zn2+、Ca2+、Mg2+、Na+和pH值对柞蚕蛹蛋白的溶解性均有极显著影响。各阳离子对蛹蛋白溶解性的影响顺序为:Zn2+>Ca2+>Mg2+>Na+,且其溶解性随着离子浓度的增加呈先升后降的趋势。所得回归方程的拟合效果较好,可用于对蛹蛋白溶解性进行分析。[结论]根据该试验结果与数学模型分析,可快速算出蛹蛋白的溶解度,有利于柞蚕蛹蛋白在食品加工中的应用。
[Objective] The research aimed to lay the foundation for the extraction of tussah chrysalis protein and its application.[Method] Based on the separation of tussah chrysalis protein,the effects of different concentrations of positive ions such as Na^+,Mg^2+,Ca^2+ and Zn^2+ on the solubility of tussah chrysalis protein under different pH value were studied by using uniform design method.And the regression equations between the solubility of tussah chrysalis protein and positive ions were fitted.[Result] Positive ions including Zn^2+,Ca^2+,Mg^2+ and Na^+,and pH value all had extremely significant effects on the solubility of chrysalis protein.And the effects of all the positive ions on the solubility of chrysalis protein in order was Zn^2+ 〉 Ca^2+ 〉 Mg^2+ 〉Na^+ and its solubility showed a trend of first increasing and then decreasing.The fitting effects of the obtained regression equitation were better and could be used for analyzing the solubility of tussah chrysalis protein.[Conclusion]According to the test results and the mathematical analysis,the solubility of chrysalis protein could be calculated quickly,which was favorable for the application of tussah chrysalis protein in food processing.
