壳聚糖及其衍生物在水果保鲜上的应用 被引量:1

摘要 壳聚糖因具有成膜性、金属絮凝性、抑菌性等特性,能被应用于水果保鲜上。本文综述了壳聚糖与水果保鲜相关特性及其应用的研究进展;讨论了壳聚糖及其衍生物对水果保鲜效果和应用潜在的危险性,指出今后应着重保鲜膜的作用机理和人体食用后代谢特性进行研究。
