摘要 探讨了发酵剂的发展,发酵剂的国内外研究现状,发酵方法、微生物发酵剂在发酵香肠中的作用研究。 The development and research status of culture starter at home and abroad, fermentation methods, as well as the function of microbe starter during sausage fermentation were discussed in this paper.
