辣椒红色素的微波提取及在仿生牛肉中的应用研究 被引量:1

摘要 采用有机溶剂微波辅助萃取法从辣椒中提取辣椒红色素,并对其在仿生牛肉中的应用进行了研究。以吸光值为指标,采用正交试验优化了色素提取条件:用95%乙醇在微波功率200W,料液比1∶10,提取时间10min的条件下,辣椒红色素的色价最高为76·8。在仿生牛肉中添加此法提取的辣椒红色素,着色效果较好且经4d稳定后色素残留率较高。 Application of capsicum red pigment in artificial beef, which was extracted from dry capsicum by micro- wave assisted technique, was studied in this paper. According to the absorbency, the optimum conditions were chosen by the orthogonal experiments: 95% ethanol as extraetant, the ratio of capsicum to ethanol was 1: 10, extraction time was 10 mins, and power of microwave was 200w. The highest color value of capsicum red pigment gained under these conditions was 76.8. The application experiments of capsicum red pigment in artificial beef showed that it had better colouring effect and pigment residue was higher after four-day stability time.
