摘要
目的探讨农村家宴的卫生状况和管理对策。方法就农村家宴的举办情况和引起食源性疾病的概况、农村家宴食物中毒的特点、卫生现状以及相应的监管问题进行分析与探讨。结果农村家宴条件简陋,卫生设施不全,超负荷运作,制作中卫生意识不强,存在诸多引起食物中毒和食源性肠道传染病的隐患,研究和落实有效的家宴监管方式势在必行。结论加强农村家宴的卫生监管是改善农村家宴卫生状况、防控农村食源性疾病发生的对策。
Objective To discuss hygienic status and management countermeasure of rural family feasts. Method The conduct condition of rural family feasts, the survey of causing foedborne diseases, the characteristics of food poisoning and the hygienic status and supervision problems were studied and analyzed. Results Conditions of rural family feasts were simple and crude. Hygienic equipments were insufficient. Workers were overload operation and lacked hygienic awareness. These problems could arouse food poisoning and foodborne communicable diseases. It may be imperative to study and carry out effective management countermeasures of rural family feasts. Conclusion The management feasts could improve hygienic status and prevent foodborne diseases.
