摘要
研究探讨了制备麦麸膳食纤维的几种工艺。结果表明,麦麸经去植酸、脱脂、烘干磨细过100目筛后,获得的膳食纤维具有较好的理化性质。如再用pH=8的碳酸钠溶液处理,可获得较纯净的水不溶性膳食纤维。超滤能有效地浓缩水溶性膳食纤维溶液。当操作压力为025MPa、膜分子截留量为10KD、溶液温度为60℃时,浓缩倍数、水的平均透过速率和水溶性膳食纤维产量分别达到109,152L/h·m2和68g/100g干麦麸。
Several processing technologies were examed for their efficiency in production of large amounts of dietary fiber from wheat bran. The technology from which the dietary fiber product got the best physical and chemical properties was to remove fat and phytic acid from wheat bran and then to be ground to pass 150 μm mesh. The highly pure water-insoluble dietary fiber could be obtained by treating with sodium carbonate solution at pH8 and 70 ℃ for 2 h. The ultrafitration was an efficient method for concentrating water-soluble dietary fiber. Its optimal parameters were membrane molecular cut-off 10 KD,operation pressure 0 25 MPa and temperature of the solution 50~60 ℃.
