结晶的乳糖衍生甜味剂有含能值低、无致龋齿特性,还可用于糖果、冷冻甜食以及焙烤食品中。 乳糖醇是一种双糖醇,由乳糖通过催化加氢制得(图一)。降低能值的组分能够从一种水溶液中获得,如乳糖醇无水化合物、一水化物、二水化物,这依赖于温度和浓度。本文将对乳糖醇的特性、应用和管理等方面进行讨论。
A crystallised material derived from lactose is found to have the charateristics of a sweetener with low calories. This report reveals its charateristics as well as its application in baking and the making of desserts .
