瓯江刺鲃肌肉营养成分分析与品质评价 被引量:15

摘要 测定了瓯江刺鲃[Barbodes(Spinibarbus)caldwelli(Nichols)]的肌肉营养成分。结果表明:瓯江刺鲃肌肉(鲜样)中粗蛋白含量为19.50%,粗脂肪含量1.91%,水分含量74.74%,灰分含量1.72%,该鱼肌肉中含有17种氨基酸,总量为66.19%(质量分数,干样),其中7种为人体必需氨基酸(不包括色氨酸),总量是25.33%,占氨基酸总量的38.27%。必需氨基酸指数(EAAI)为56.61,4种鲜味氨基酸总含量为26.57%(干重)。脂肪酸中EPA与DHA含量分别为0.72%和3.09%。 Nutritive composition in the muscle of one tail Spinibarbus caldwelli(Nichols) were tested and analyzed through the common methods.The result showed that the contents of crude protein,crude fat,moisture and crude ash in the fresh muscles were 19.50%,1.91%,74.47% and 1.72% respectively.The muscles all contain 17 amino acids,the total amount of which was 66.19% (mass fraction,dry weight) and 7 essential amino acids for human(Tryptophan not included) accounting for 25.33%,holding 38.27% of total content of amino acid.It was apparent that the constituent ratio of the essential amino acids in general accorded with the FAO/WHO standard.The essential amino acid index(EAAI) was 56.61 and the content of 4 kinds delicious amino acids was 26.57%(dry weight).The contents of EPA and DHA in fatty acids were 0.72% and 3.09% respectively.The microelement ratio in the muscle of Spinibarbus caldwelli(Nichols) was reasonable.
