园艺植物果实糖积累的研究进展 被引量:49

摘要 糖的种类与含量对果实风味和品质具有重要影响。本篇综述在两个层次上对高等植物果实糖的积累机理进行了全面综述:(1)糖在果实中的卸载及转化;(2)果实中糖积累过程的调控因子。并重点阐述了糖代谢的关键酶、耗能性无效循环、信号调节等因素在糖积累过程中的调节作用。总结了糖积累的重要因素,结合目前的研究现状,提出了糖代谢研究的主要方向。 Sugar kind and concentration have important effects on fruit flavor and quality. This review summarized sugar accumulation mechanism of horticultural plant fruits in two aspects: (1) sugar unload and sugar conversion in fruits; (2) the regulated factors in sugar accumulation. The regulated effects of sucrose metabolizing enzymes, mechanism of futile cycle and signal in sugar accumulating progress are explained. This study has summarized sugar accumulation factors and pointed out the prospect of sugar metabolism according to the current researches on this aspect.
