不同品种黄酒中多酚含量及抗氧化性研究 被引量:29

Study on Polyphenol Content and Antioxidant Capacity in Various Kinds of Yellow Rice Wine

摘要 黄酒是我国的民族特色酒种,与啤酒、葡萄酒并称为世界三大古酒,享有"国酒"之美誉。用Folin-Cio-calteu法对黄酒中多酚含量进行了测定,发现黄酒中含有大量的多酚类物质。利用DPPH法和水杨酸法对其抗氧化性进行了检测。结果表明,多酚类物质具有抗氧化功能,且黄酒清除自由基的能力与其含量成正比。 Yellow rice wine is Chinese specialty, as one of the three most ancient wine products in the world (the other two are beer and grape wine), it wins the honor of "State Wine". Polyphenol content in various kinds of yellow rice wine was determined by Folin-Ciocalteu method, and it was found that there was large amount of polyphenol substances in the wine. Besides,the antioxidant capacity of yellow rice wine in vitro was studied by DPPH and salicylic acid method, the results showed that polyphenol substances had antioxdative capacity, and its content was positively related to free radicals scavenging effects of yellow rice wine.
