摘要
大曲是一种粗酶制剂,在酿酒过程中起糖化发酵的作用,其淀粉含量高达55%。通过对未蒸煮大曲、生淀粉、熟淀粉和蒸煮大曲在同等条件下的发酵情况研究,结果表明,大曲淀粉是可以被其自身微生物利用的,其利用速度介于生淀粉与熟淀粉之间,而且更偏向于熟淀粉。
Daqu, a kind of crude zymin, plays the roles of saccharification and fermentation in liquor-making process. Starch Content in Daqu reaches up to as high as 55 %. The research on the fermentation status of uncooked Daqu, uncooked starch, cooked starch and cooked Daqu under the same technical conditions proved that starch in Daqu was available in the fermentation and its availability rate was between that of uncooked starch and cooked starch (close to cooked starch availability rate).
