The article documents the changes in Chinese restaurant business in the periods of pre- 1965 and post-1965, the rise of Monterey Park and San Gabriel Valley in Southern California as new Chinese food centers and their impact. In the diverse multicultural context, the article analyzes changing life style and cultural identity （including food habit） of a new generation of Chinese immigrants in their accommodation to the host mainstream society.
