河北省超市8类食品卫生监督监测结果分析

摘要 目的了解河北省超市食品卫生现状,加强超市食品卫生监督管理。方法用随机抽样的方法从全省11个市中随机抽取7个市的43家,食品超市,对其正在出售的8类274份常见食品进行监督抽检。结果274份食品样品中,检测项目不合格的有50份,不合格率为18.2%。其中凉拌菜不合格率最高,为57.5%。其次为蜜饯、熟肉制品、糕点和面包、冷冻饮品,不合格率分别为42.5%、15.9%、10.0%和2.5%,膨化食品、乳饮料和面粉的检测项目全部合格。结论超市散装食品及现场加工制作食品存在问题较多,是超市食品卫生监督工作的重点。 [ Objective] To learn the hygienic situation of the food in supermarkets of Hebei Province and strengthen the work of hygienic surveillance. [ Methods] Random sampling method was used to select 43 supermarkets in 11 cities of Hebei Province; detection was made on 274 samples of 8 kinds of common food. [ Results] 50 samples ( 18.2% ) in the detection were ineligible ; the ineligible rate ( 57.5% ) of the salads took the first place, that of the glazed fruits, cooked meat products, cake and bread and frozen beverages were 42.5% , 15.9% , 10.0% and 2.5% respectively; all the swelled foods, milk and flour were eligible. [ Conclusion] There are many problems in the bulk food and self-made food in the supermarkets; hygienic supervision work should be strengthened.
