摘要
目的:探讨餐饮食品原料相关违法现象的类型与成因,为制定预防控制措施与管理政策提供科学依据。方法:对我国2006年部分省市餐饮食品原料相关违法案例进行分析。结果:共收集我国17个省市餐饮食品原料相关违法案例925起,发生最多的违法现象是采购、贮存超过保质期限和标签标识不符合卫生规定的食品原料,其中出现卫生问题最多的是调味品,引起食物中毒最多的食品原料为熟肉制品。结论:解决食品原料卫生问题,应建立完善的食品安全管理体系,从源头加强监管,并积极组织培训,提高餐饮业经营者对法律法规和食品卫生知识的认知能力和卫生监督人员的监管能力。
Objective: To study the types and reasons of the illegal case on catering materials so as to provide scientific basis for control measures and administrative policy. Methods: We collected and analysed the illegal cases on food catering materials in some cities of China in 2006. Results: A total of 925 illegal cases on food catering materials in 17 provinces and cities. Stock food materials which had expired was the largest number in all of the illegal cases, and the next one was illegal labeling. Condiment was the chief materials in illegal food. Cooked animal meat was the maximum cause in reported food-poisoning cases. Conclusion: We should establish and improve the system of food safety control,make progress in training, enhance the cognition about laws and the knowledge of food hygiene, as well as the ability of supervision management of the health supervisory staff.
