提取溶剂对应用型麦谷蛋白溶涨指数法影响的研究

摘要 选用高、中、低筋3种典型小麦粉样品,采用应用型麦谷蛋白溶涨指数法研究了提取溶剂SDS的不同纯度及SDS溶液、SDS乳酸溶液、SDS乙酸溶液中SDS、乳酸、乙酸的不同浓度对麦谷蛋白溶涨曲线的影响.研究表明,SDS纯度为99%浓度为2%的溶液是有利于麦谷蛋白充分溶涨的最佳提取溶剂. Three typical types of wheat flour samples respectively with high, medium and low protein content were chosen as materials in this research. The method of applied swelling index of glutenin (SIG) was adopted to investigate the influence on swelling curves of different purities of SDS, extracting solvent and different con- centrations of SDS, lactic acid and acetic acid in SDS solution, SDS-Lactic acid solution and SDS-Acetic acid solution. The results showed that the optimal extracting solvent is 2% SDS solution with purity of 99% , which is good for the Swelling of wheat-Glutenin.
