摘要
中国酱作为世界三大酱流派之一,在中国烹饪中的使用经历了由被动到主动,由民俗到厨业的技术性使用,由"不得其酱不食"到目的性使用的过程。
Chinese sauce -as one of the top three kinds of sauces in the world, has undergone stages of from passive use to initiative use, from customary use to culinary technical use, from ＂no sauce, no dinner＂ phase to purpose oriented use.
