摘要
以猪的背最长肌为研究对象,研究不同品种猪背最长肌中部矿物质元素的含量。实验结果表明:杜洛克猪肉中钾元素含量最高,达3 802.19mg/kg;淮南猪肉中钠、锌元素含量最高,达413.79mg/kg、7.38mg/kg;南阳黑猪肉中钙、铁元素含量最高,达35.94mg/kg、11.51mg/kg。总的来讲,地方猪肉优于外来品种猪肉,但是猪肉还不能满足人们对所有矿物质元素的需要。
The longissimus dorsi was regarded research project in this experiment in order to study the mineral element content among different pork meat. The result revealed that the content of potassium was the highest in Duroc, 3802. 19 mg/kg; the content of sodium and Zinc was the highest in Huainan pig, 413.79 mg/kg, 7.38 mg/kg; the content of calcium and iron was the highest in Nanyang black pig, 35. 94 mg/kg and 11.51 mg/kg respectively. On the whole, domestic pigs was better than breeds abroad on meat quality, but people's daily requirement of mineral elements can not be met by pork only.
