摘要 [目的]筛选出测定水果中VC含量的最佳方法。[方法]采用恒电流库仑分析法测定了水果中VC含量,以永停终点法指示库仑滴定终点。[结果]与国标规定方法相比,恒电流库仑分析法操作简单,用电流法指示终点误差小。恒电流库仑分析法具有灵敏、准确等优点,可快速测定水果中VC含量。[结论]该研究为基层机构对水果的质量控制提供了可靠的方法。 [ Objective] The research was aimed to screen out the optimal method to determine the content of Vitamin C, [ Method] The content of Vitamin C in fruits was determined with the method of Constant current coulometry Dead-stop method was used in the detection of end point of the coulometric titration. [ Result ] The method of constant current coulometry was easy to operate compared with intemational method. There was little error. The constant current coulomedelicacy was sensitive, accurate. The content of Vitamin C in the fruits could be measured rapidly. [Conclusion] The research provided a creditable method to control the fruit quality for the basic institution.
