摘要
测定分析富硒鹰嘴豆芽氨基酸含量,采用氨基酸自动分析仪测定富硒鹰嘴豆芽中氨基酸含量的方法,分析比较氨基酸的含量和比例。得出结论:硒影响了鹰嘴豆芽中氨基酸的含量和比例,提示鹰嘴豆芽中的有机硒可能以硒氨基酸形式存在。
To determine and analyze the contents of amino acids in selenium chickpea sprouts. The contents of amino acids in selenium chickpea sprouts were determined by amino acid analyzer. The contents and ratio of amino acids were analyzed and compared. Selenium affected the contents and ratio of amino acids in chickpea sprouts, suggesting that Se amino acids may be the main pattern of organ selenium existing in chickpea sprouts.
