摘要
以乙醇为溶剂从杨梅中提取红色素,并用721型分光光度计对该色素在不同温度、pH值、光照及不同介质条件下的稳定性进行了检测。结果表明:此色素是水溶性色素,在酸性条件下稳定性较好,但光照、氧化剂、还原剂、强碱条件及一些金属离子对其稳定性有一定的影响。
The stability of red pigment, which were extracted from the Myrica rubra Steb et zucc., was detected under different temperature, pH, sunlight and mediaeval conditions. The results show that the pigment can dissolve in water, the pigment could be stable under acidity conditions. Sunlight, oxidizing agent, reducing agent, some metallicion and strong alkali conditions could obviously effect the stability of the pigment.
