直链淀粉、β-环糊精-共轭亚油酸复合物对共轭亚油酸的氧化保护研究 被引量:5

摘要 具有多种生理活性功能的共轭亚油酸(简称CLA)容易被氧化而丧失应有的功能因子作用。通过比色法测定过氧化值来研究直链淀粉、β-环糊精-CLA复合物对CLA的氧化保护情况。将样品储藏于68℃的烘箱中,定期用超声波来提取复合物样品中的CLA并测定过氧化值。实验表明:直链淀粉-CLA复合物对CLA能起到很好的氧化保护作用;摩尔比约为1∶1的β-环糊精-CLA复合物对CLA的氧化保护作用较弱。 Conjugated linoleic acid (CLA) has been shown to have a lot of health benefits. Since CLA is highly susceptible to lipid peroxidation, amylose-lipid and β-cyclodextrin-lipid complexes have been made to protect it. The complexes samples were stored at 68℃ and tested peroxide value using colorimetry after extracting CLA from complexes by ultrasonic intermittently. The results showed that amylose-CLA complexes can protect CLA from oxidation well while β-cyclodextrin-CLA Complexes at about 1:1 mol ratio can provide faintish oxidation protection.
