摘要 对不同豌豆品种加工豌豆豆奶的适应性进行了初步研究。选自河北科技师范学院培育的豌豆新品种:宝峰东8号、须菜1号、须菜3号,及我省主栽豌豆品种:中豌5号、中豌6号五个品种,在相同条件下进行浸泡、灭酶、磨浆、酶解、调配等处理,比较五个豌豆品种在各处理中的品质优劣。结果表明,宝峰东8号豌豆品种加工豌豆豆奶效果最佳。 The adaptability for producing pea milk was studied with three new pea varieties bred from Hebei Normal University of Science & Technology, i.e. Baofengdong 8, Xucai 1, and Xucai 3, and two pea varieties planted widely in Hebei province, Zhongwan 5 and Zhongwan 6. Through the processing of seed soaking, enzyme inactivation, wet grinding, enzymatic hydrolysis and blending under the identical conditions, the advantages and disadvantages of the five varieties in each processing procedure were compared respectively. Results show Baofengdong 8 is the best pea variety for producing pea milk.
