Carotene, as one member of the carotenoids family, is an important kind of bioactive material with good colorant ability as well as healthy functions. The different sources and chemical components, further the discrepancy of the bio - functions of carotenes were discussed, which would be helpful for the correct understand and selection of carotenes.
