摘要
以鹿肉为原料研究其蛋白水解物的生物活性。采用双酶组合水解,即先用胰蛋白酶再用木瓜蛋白酶,两种酶均按各自最适条件进行水解。用MTT法测定结果表明,鹿肉蛋白水解物具有明显的促进非洲绿猴肾细胞(Vero)和小鼠成纤维细胞L929增值的活性。
The biology activity of venison dorsi Iongissimus (LD) protein hydrolysates were studied. The venison was hydrolyzed with double enzymatic combination hydrolyze methods in which trypsin and papain were added successively. MTT colorimetric analysis was adopted to determine the proliferation of Vero cell line and L929 cell line in response to the venison protein hydrolysates. The result indicated that the venison protein hydrolysates could improve the proliferation of the above cell.
