摘要
为了解木瓜(Chaenomeles speciosa(Sweet)Nakai)叶芽中的营养成分及其含量,采用氨基酸分析仪、高效液相色谱仪、原子吸收光谱仪和原子荧光分光光度计对新鲜的木瓜叶芽中的氨基酸、有机酸、无机矿物质元素和维生素进行了测量。结果表明:100g木瓜叶芽中谷氨酸含量最高,为2.25g,胱氨酸含量最低,为0.054g,氨基酸的总含量为17.273g;100g木瓜叶芽中苹果酸含量最高,为1.819g,琥珀酸含量最低,为0.00516g,有机酸的总含量为3.605g;100g木瓜叶芽中钾元素含量最高,为1.01×106μg,硒元素含量最低,为0.042μg,无机矿物质元素的总含量为1.2885×106μg;100g木瓜叶芽中维生素E的总含量为36.126mg,维生素C的含量为20.918mg。
In order to understand the nutrition ingredient and its the content of the leaves bud of Chinese flowering quince (Chaenomeles speciosa(Sweet) Nakai), used the amino acid analyzer, the highly effective liquid phase color spectrometer, the atomic absorption spectroscope and the atomic fluorescence luxmeter to the amino acid, the organic acid, the inorganic mineral substance element and the vitamin of the fresh leaves bud of Chinese flowering quince has carried on the survey. The result indicated: the lutanic acid content of the leaves bud of Chinese flowering quince was highest, 2.25g/100g, the cystine content was lowest, 0.054g/100g, the amino acid total content was 17.273g/100g ; the malic acid content of the leaves bud of Chinese flowering quince was highest, 1.819g/100g, the succinic acid content was lowest, 0.00516g/100g, the organic acid total content was 3.605g ; the potassium element content of the leaves bud of Chinese flowering quince was highest, 1.01 × 10^6μg/100g, the selenium element content was lowest, 0.042μg/100g, the inorganic mineral substance element total content was 1.2885 × 10^6μg/100g; the VE total content of the leaves bud of Chinese flowering quince was 36.126mg/100g, the W content was 20.918mg/100g.
