摘要
利用高效液相色谱法(HPLC),对9种绿茶进行了生物碱的定量和定性分析和比较。通过实验得出鉴别绿茶品质的重要参数。结果表明:茶碱含量与产地气候有密切关系,咖啡碱的含量随产地气候变化较小,而咖啡碱含量与茶碱含量比值具有稳定而明显的差异,可以作为绿茶的生化鉴别依据之一。
The contents of theine and caffeine from 9 kinds of green tea were analyzed by high performance liquid chromatography (HPLC). An important parameter relevant to green tea' s quality was found. The climate had apparent impact on theine' s content, whereas little to do with caffeine' content. The ratio of the caffeine to theine showed steady and distinct difference in various teas. And the ratio was regarded as one of bases of green tea' s biochemical discrimination.
